Moors and Christians (gastronomy)
Moros y cristianos (left) accompanied by ropa vieja Moros y cristianos (also: cristianos y moros or congris) - a dish typical of Caribbean cuisine, especially Cuban, Puerto Rican and Dominican. Also known in Florida. Cuba is a national dish.
The rice dish is served with beans. Moros means the Moors (black beans), and Christian Christians (white rice). Cooked beans and rice are prepared separately and mixed only after cooking and drying, which gives a bicolor color impression. As the spices are added, depending on the cuisine: garlic, onion, oregano, cumin, bay leaves and green pepper. The dish is served, among others. For celebrations and family encounters all over the Caribbean. Bibliography
