Cookie Empire Empire biscuit - a type of biscuit derived from Scotland, in the form of two shortbread round cookies, covered with a layer of jam covered with icing and topped with candied cherries.
Originally, the cookie was known as Linzer biscuit ("linen cake") and then German biscuit ("German cake"). With the outbreak of World War I, the last name, due to the negative connotations, gave way to empire biscuit ("imperial cake"). Another Belgian biscuit (Belgian biscuit).
