Nicolas Saboly (born 30 January 1614 in Monteux, died 25 July 1675 in Avignon) is a French poet and composer.
Priest and organist associated with the cathedrals of Carpentras (1639-1643), Arles (1643-1646), Aix-en-Provence (1652-1655) and Nîmes (1659). From 1668 until the end of his ministry he served in Avignon. He is the author of the famous Noëls (Kolędy), closely related to the Provencal folklore and rich in linguistic wealth. At first the lyrics of these carols were written without a note, as Saboly wrote them generally for the widely known melody. He composed two polyphonic mantras and two motifs.
