Sobao

Sobao (also: sobao pasiego, pl. sobaos) - traditional Spanish sponge cake, characteristic of the Cantabria region, especially the Pas and Miera valleys.

It is sold in small, square pieces, each of which is placed in a characteristic paper wrap (parchment) with rolled edges called gorros, or a hat. They are made of eggs, sugar and flour, with the addition of regional butter from the valleys Pas and Miera. Also add liqueur and grated lemon peel. In the past, they were made from bread dough, but nowadays the tradition in mass production has disappeared - using baking powder. Sobao has a high energy content, a lot of carbohydrates and a moderate amount of fats. It also has high vitamin A and D content.
