Expedition (gastronomy)


Expedition - in restaurants: the process of transferring ready-to-eat food from the production facilities for their preparation, on the hands or on the table to the consumer.

Expedition includes the delivery of food to the dining room (to the table), to the buffet, to the takeaway, and to the washing of dirty dishes after the meal is finished by the consumer. Expedition is also called room where the waiters take food and drinks, according to the orders placed. Food preparation and expedition areas should be located directly next to each other or at a short distance.
